RANGE OVENS

Electric range ovens are usually insulated by 21/4 lbs. or 3 lbs. (density) of fiberglass insulation. Some ranges have a thicker oven insulation to maintain reasonable surĀ¬face temperatures on the main top panel. The range obtains good results because the design of the main top panel has provided for a deep air space between the oven-top insulation retainer and the main top. This design restricts heat transfer to the working surface of the top panel.

Oven Vent. Because air expands when it is heated, all ovens must be vented. This is usually done through the right rear surface unit. In oven cooking, the heated oven air absorbs moisture in addition to expanding. To prevent the moisture-laden oven vapor from condensing on the sides of the oven or on the front of the range, the oven door must be sealed at the top and have a gap of approximately I/2 ” at the bottom so that sufficient air can circulate. through the oven and discharge the moist vapor through the oven vent. On most ranges, an aluminum oven shield seals the openĀ¬ing between the frame and the main top panel to prevent condensation of the hot moist vapors which escape from the side of the oven door. If moisture does condense on the front of the range frame around the oven door, it is an indication of an improper oven door top seal or a restricted or clogged oven vent.

Oven Door Broil Position. In ovens equipped with top heat for broiling, provision is always made for leaving the oven door ajar during the broiling period. This gives the effect of true charcoal broiling instead of high temperature baking. Some ranges have oven door hinges equipped with the broil stop position. Others have a broil stop mounted on the broil unit. This stop should be turned to the forward position to hold the oven door ajar for broiling. When the oven door is to be left ajar, the drip tray should be pulled out about 11/2″ to prevent the oven heat from discoloring the plastic knobs which are directly above the oven door

Oven Units. The oven units used in electric ranges are generally of the open-coil type. In contrast to surface-unit cooking for which contact-heating is most desirable, oven cooking requires radiant heat for optimum performance.

The bake unit ( always located in the bottom of the oven) is covered by a baffle to provide protection from food spillage. This baffle also absorbs radiant heat from the bake-unit heating element and helps distribute and equalize the heat in the oven. The oven units can be pulled. straight out of the oven. They need be removed only when the user desires to give the oven a thorough cleaning. The oven units themselves should never be placed in water, for they require no cleaning. The bake-unit baffle, which may be subjected to food spillage, can be removed from the bake unit for separate cleaning.
